Bring on the Gluten Free

I'm off to a great start!  Day 1 is officially coming to an end and I successfully made it through- living gluten free that is.  I am also ridding my system of other foods that I am sensitive to.  Who knew coffee, tea (black & green), basil, green beans, nutmeg, chicken, venison, various other foods, and any and everything gluten related were and are the culprits wreaking havoc on my poor adrenal system???  After all, those seem like pretty harmless; dare I say healthy foods, right?  WRONG!  Who knew?  Certainly not me!!!
So after my pity party in the doctor’s office (she was very patient with me) I left, determined to make this dietary changes.  Hopefully it won't be forever, but at least for 6 months.  The bright side to this is I don't have to give up dairy....thank you Jesus!  I'm not sure I could have survived giving it all up! Thank God for Google and many creative receips and a boat load of money ….gluten free is ridiculously expensive, of course it is.  I always joke, we don’t vacation; we spend money on health insurance, doctor bills, and veggies/fruit.

I won't bore you with the details of each meal I consumed today; however, I will have you know I was pleasantly surprised how well I did.  I even enjoyed my salad with homemade dressing, (thank God I can still have garlic, vinegar, olive oil and salt) it was surprisingly good!  After all these changes I knew I needed a treat....bring on the chocolate chip oatmeal cookies (gluten free of course)!  They were SO good.   Of course I improvised a bit, but they were heaven to my lips!!  Bring on day 2.

Good for you Kate! Where are my cookies---I'd have loved to try ONE---well maybe 2 or 3!! :)

Hi Katie - check out the Old Kountry Market on Route 5 just outside of Vernon. I think they have some gluten free foods that would be tasty!

Hi Katie! God bless you for tackling this endeavor! And praise the allowance of dairy. :) I did not know that culprit gluten was yet responsible for affecting the adrenals! You have educated me today. Best of luck and stay strong!
